Life Goes On.....

I had originally intended to post updates every now and then of Tristan but as life is so good at doing.....In March we were thrown another curve ball when Ellie almost died from a seizure. She has since been diagnosed with Epilepsy and we are still coping with how to live normally from day to day. So maybe this blog will be my saving grace, my sanity.

It seems to me that we take so many things for granted. I know I did. This last year has been a huge wake up call for me. One minute I have both my kids and the next minute they are almost ripped away from me. So this year I decided to become more hands on. I help out at Girl Scouts, I joined the PTA, and we moved to Fairbanks to be closer to everything. Some days are overwhelming and I just remember the blessings in my life. Two little ones in particular and one said husband who has really stepped up taken a huge burden off my shoulders.

Kudos to Karina

I also wanted to say that Karina's Kitchen Blog is TOTALLY awesome! I found so much useful information on her site. Thank you, Thank you, Thank you! My sanity is somewhat saved!!!

Hello World....

So I am not new to the blogging community. I have used blogs for school before. This time it is a little different though. I need a place where I can process my thoughts and get them out there! I am creating this blog because of my son Tristan. He is becoming the savior of our home in that we are now living healthier lives because of him. Health has been on my mind for quite some time. Two years ago, I decided to go through with a gastric bypass that literally saved my life. Having lost over 200 pounds and feeling much better, I feel ready to take whatever life throws at me. Last year, Tristan was diagnosed with asthma that he has had since birth; and allergies to barley, chicken, turkey, and beef. He was also born with Acid Reflux Disease. After a year, he still wasn't better and ended up in the hospital a couple of months ago with lung problems and we also discovered a 15 pound weight loss. More allergy testing revealed that he is also allergic to wheat, corn, and rice.

So......

Where do we go from here?

Hence the reason for this blog.... After much frustration and hours of depressing research.... Guess what I learned??? Absolutely nothing! There are MANY wonderful websites for people with Celiac disease and for gluten free diets; but there was nothing for what my son is going through. I hope that this blog might reach others who are suffering from the same allergies as my son. As I find recipes that work, I will post them and I will also keep everyone updated on Tristan as to how he is doing.

For now, we are radically changing the way we eat at home and next month we will be traveling to AZ for further tests.
